100% certified organic Pinot Noir from “Les Juliennes”, a vineyard located on the terres blanches in Bouzy, on the border with Tauxières, and planted in 1973. Shallow, brown chalk soils. This undewent whole cluster maceration for 2 to 3 days, then direct pressing. The still wine is racked once and not filtered before its secondary fermentation. Low dosage of 2 to 3 grams/liter (extra brut). The nose shows blood orange, cedar, plum flesh, and a bit of baked apple. The full-bodied and quite vinous palate is textured with spice, sugar plum, blood orange, muddled ripe strawberry, a hint of amarena cherry and oak spice. The finish is slightly tannic and wild with a nice long bitterness. Gorgeous! Drinking great now but will improve in the cellar for another 5-10 years.
