100% organic Chardonnay from Chablis master Damien Bardet. The base wine is made at the domaine and then transported to Dominique Gruhier in Épineuil (one of our favorite winemakers in the area!), who turns the still wine into sparkling. No dosage. Bone dry, zippy and zingy- like Premier Cru Chablis turned into Champagne. Limestone minerality, tart green apples, and citrus flowers, with just a hint of leesy toastiness. Only seven cases were imported into the US! Bardet is a small family farm that produces high quality bread grains and - of course - classically styled wines in the ancient Chablisienne village of Noyers (15min south of Chablis proper) using old-school “technology”: wooden basket presses, giant neutral French oak foudres, and most importantly: time (both in terms of vine age, and with the vinficiation process itself!). Current generation brothers Damien and Alexandre Bardet farm a bounty of old vines.
