100% Palomino, sourced from criaderas in the Mil Pesetas bodega. Mil Pesetas is one of many cellars located within a complex of buildings dating back to the 1700s in the neighborhood then known as San Blas. Barbadillo reconditioned this Mudejar-style cellar and began the oxidative aging of amontillado here in 1920. Aged both biologically (with flor) and oxidatively (without) for a total average of about 10 years in old American-oak botas. Bottled en rama (minimal filtration). You’ll find rich, nutty aromas and a gentle sweetness on the palate. Thanks to slow oxidation during long ageing; this wine has a full, round, spicy, character that harmonises perfectly with richer foods of all kinds, like hearty stews, red meat, and cured cheese.
