100% organic Chardonnay from 40 year old vines. Damien Bardet works a small 2.2-hectare vineyard cluster - most of which sits wedged between 1er Crus “Montmains” and “Les Beauregards”. The wines are crafted in a centuries-old underground cellar, and he employs old-school “technology” like wooden basket presses, giant neutral French oak foudres -- and most importantly: time. Both in terms of vine age, and with the vinification/aging process itself, time is what makes these wines special! Fermented with native yeasts, bottled unfined and unfiltered and aged in bottle for 1 year before release. Excellent fresh Chablis. Notes of classic limestone minerals, lemon, brioche and white flowers. Medium-light bodied and not too austere, with lemon tart on the palate offset by slight creaminess and a long, salty finish with super brisk acidity.
