100% organic Chardonnay from vines planted between 1998 and 2008 on Kimméridgien clay limestone soils in Préhy Native yeasts, aging in steel, enameled and stainless steel tanks with full malolactic. Bottled unfined and unfiltered with minimal sulphur additions. Extremely fresh notes of lemon, lime, ripe apples, underripe tropical fruit alongside savory notes of wet stone and honey, wrapped up in a slightly creamy, leesy texture with zingy, zesty acidty and a hint of phenolic bitterness on the long finish. Bardet is a small family farm that produces high quality bread grains and - of course - classically styled wines in the ancient village of Noyers (15min south of Chablis proper) using old-school “technology”: wooden basket presses, giant old French oak foudres, and most importantly: time (both in terms of vine age, and with the vinficiation process itself!).
