100% organic Chardonnay from the Chapel & Quink vineyards. The uplift, Nisene soils are comprised of eroded sandstone and shale resembling coarse, white sand. Fermented with native yeasts in neutral French barriques and puncheons. Before fermentation, the juice was intentionally oxidized to highlight the structure and elongate agebility. Aged 13 months in neutral French oak. 134 cases made. 13.4% alcohol. A light bodied but wonderfully textured wine with excellent acidity, plus hints of green apple, citrus, oyster shell and delicate oxidative notes of bitter almond skin. This is the project of husband and wife team Drew Huffine and Emily Virgil. Drew is currently the winemaker at LIOCO and has worked at Copain, DuMOL, Kosta Brown and Tuck Beckstoffer.
