HIGHLY ALLOCATED CULT BURGUNDY
100% Pinot Noir from a single acre plot of vines planted in 1947; it is a markedly cool site, featuring deep soils with limestone and rich clay. The gently-pressed organically and biodynamically farmed grapes are 100% destemmed, fermented on indigenous yeast, then aged for 16 months in barrel (20% of which is new oak). In the cellars theres no added SO2 during vinification. No fining, light filtration if necessary. 30-45 ppm total SO2 at bottling. Balanced, lively and expressive young Burgundy, with red and black brambly berry fruits, peppery spice, lifted floral notes, rosemary and forest floor savoriness, lovely integrated oak notes and plenty of structure backing it up. Jérôme is an under-the-radar vigneron making about 2,000 cases a year with delicate, old school methods in his own home.
