100% Pinot Noir from the Fox Creek Vineyard. The grapes were harvested at 19.5 brix, settled overnight and fermented in a combination of stainless steel and neutral oak barrels. The wine was aged for 6 months in neutral oak barrels before blending. The wine was then aged in bottle for an additional 22 months before disgorging by hand. 12.5% alcoholl. 4 g/l dosage. A bone dry, crisp sparkling rosé, with notes of golden raspberry, pomelo, and oyster shells. Medium bodied with exuberant fizz. Winemaker and founder, Josh Hammerling, launched this natural-sparkling-wine focused winery in 2018 in Berkeley (after working for Broc Cellars and Donkey and Goat). He makes some of California’s most interesting fizzy wines.
