100% organic Chardonnay from the Kimmeridgian limestone soils of the Fèvre estate in Fontenay-Près-Chablis, just northeast of the Grand Crus.The oldest vines were planted by Gilles’s grandfather in 1960. Entirely done in stainless steel and aged on the lees for 10 months. Fresh, vibrant aromas of green apple, lemon zest, and wet stone. The palate reveals a crisp, mineral-driven core with layers of citrus, white flowers, and a slight saline note, characteristic of its cool-climate origins. The wine finishes with a refreshing, clean acidity that leaves a lasting impression of flinty minerality. There are many Fèvres in Chablis, but this particular branch has been farming and making wine here since 1745. Husband and wife team Nathalie and Gilles Fèvre run the domaine along with their daughter Julie.
