100% certified organic Pinot Noir from 40 year old vines on clay and Bajocian limestone. Spontaneous fermentation with very delicate carbonic maceration of destemmed grapes. Aged 9 months in 228L old French oak barrels. Bottled unfined and unfiltered with no sulphur additions. Like most Labet wines, give this some air to let the reduction blow off. High toned, with lifted aromatics of wild red berries, menthol, forest floor, rosehips and hibiscus tea, with just a hint of wild animal barnyardiness. On the palate, it is elegant yet intense, fresh yet complex, and has a very long finish. Tannins are light and acidity is high. This is one of those wines that changes with every sip. Chill it slightly and crush it with some duck breast.
