An amazing, distinctive wine. 100% sustainably grown Cabernet Franc hand harvested from a low-yielding vineyard on granite soils. Bunches were de-stemmed and gravity-fed into tulip-shaped concrete fermenters, where whole berries were cold-soaked for 3 days before primary fermentation commenced with native yeasts only. Aged in 1000-litre French oak vats for 11 months. Bottled unfined. 13.33% alcohol.
