100% organic Malbec from the Black Ridge Vineyard here in Los Gatos. The soil at this particular site has a low pH which lends to wines with greater tannin potential so a combination of punchdowns and delestage are done during fermentation to manage tannin extraction. Aged in 25% new French oak for 18 months before being bottled unfined and unfiltered with minimal sulphur. 14.5% alcohol. Medium-full bodied, with a dark inky purple color in the glass. This is maybe what Malbec tastes like when it’s not super ripe and oaked out. Aromas of loam, crushed rocks, mushroom and elderberry. There’s touches of black cherry and sweet oak on the dry palate, but it’s the peppercorn, wild mint and graphite flavors riding the tight weave that make the magic. Pair this with BBQ ribs and enjoy!
