75% Pinot Noir and 25% Macabeo, all organic and dry farmed. After harvest, each grape’s must goes through primary fermentation separately in stainless steel before being bottled together with a small dosage for a second fermentation in bottle. These bottles then rest for at least 20 months before disgorgement and release to the market. 12.0% alcohol.
Tasting Notes
This is definitely a step up on everyday Cava. This wine is vivacious and exciting in the glass. An explosion of aromas of wild strawberries, raspberries, and rose petals jumps from the glass, leading to a palate that is fresh with berries, cranberries, cherry blossom, and rhubarb. A very crisp and refreshing Cava with persistent and clean bubbles, it is ideal for the dinner table or any occasion possible. It’s hard to resist paired with bites of salmon tartare.
