100% organic and estate grown Pinot Noir. Hand picked at night into small baskets. All lots remain carefully segregated and are individually fermented on native yeast, with nearly all fruit destemmed. Custom built, four-ton concrete fermenters with no temperature control. Pressing is extremely gentle and the very little of the pressed wine is used. Aged in neutral 228L barrique. Perfumed and aromatic on the nose, it gets more expansive with some time in the glass, showing bright red cherry, tart raspberry, leather, loamy earth and some peppery spiciness. Light in body, with tons of bright, tangy fruit alongside more earthy, almost gamy notes. Totally destemmed fruit and neutral oak aging mean its not a crunchy, tart Pinot- its a little more rounded and dense in mouthfeel despite the light body. There’s still a lot of fine tannin and juicy acidity under there.
