50% Chardonnay, 25% Pinot Blanc and 25% Pinot Auxerrois; all farmed biodynamically from a single 30-year old vineyard. Made in the Champagne method, aged on the lees for a minimum of two years, and dosed with only 3-4 g/L of sugar, making this a very dry Extra Brut. Production is only about 800 cases annually. Deeply fruity, lively, well-structured and long, this offers serious competition to more expensive Champagne. The nose opens with a lifted aroma set of bright citrus, white flowers, white nectarines, and a whisper of cream. The palate is light with a zippy citrus, green apple, nectarines, chalk and a just there note of cream. Mélanie relies on fresh acidity and minerality, and this wine has both of them in spades.
