100% certified biodynamic Chasselas from 30+ year old vines grown in several estate vineyards on limestone, gravel and silt. Féchy marks the home village of La Colombe and is where most of the vineyard holdings lie. In Vaud, vineyards sit 450 to 600 meters (1,500 to 2,000 feet) above sea level but, thanks to the lake, they experience rather mild growing conditions despite their high altitude. After a slow press cycle this wine’s native yeast ferment occurs in cool stainless steel. Aged an additional 9 months on its lees in stainless steel. Minimal SO2 additions. 12.3% alcohol. We don’t get to drink Swiss wines very often because the Swiss don’t let much leave the country! Very light in color, with delicate notes of lemon zest, grapefruit, peach, wet stone, white flowers and white pepper. Light, dry, mineral-driven and crisp, have it with some raclette or a white sauce pizza.
