100% organic Listán Negro from steep, volcanic hillside vineyards on the island of Tenerife, one of six to produce wine in the Canary Islands. Fermented in stainless steel with native yeasts, 50% done by carbonic maceration and the rest traditional. Only 9,000 bottles were produced. This is an expressive, unusual wine showing tons of varietal character- the nose is full of dark fruit, smoke, pepper, minerals and earth, with some tart red fruit peeking through. Light on the palate, with tangy acidity and slightly grippy tannins, which are softened a bit by the carbonic maceration. Linaje del Pago is a small organic B&B and farm (the Canary Islands equivalent of an Italian agriturismo). They only grow native varietals and make only a few barrels each year. If you visit, they have five guest apartments converted from a historic 18th century house!
