100% Grüner Veltliner from the Spring Hill Vineyard. Situated on the southern hills, the vineyard benefits from cooler sea breezes in the evenings to keep the grapes vibrant. The soils here are loamy with pebbly ironstone sitting on top of red clay. 50% of the wine was fermented whole cluster, while the other 50% was direct pressed into neutral barrel. The two components then spend a year mingling in concrete egg on full lees before bottling unfined and unfiltered with no added sulphur. Complex, crunchy and super textured, this is a super fun expression of Grüner Veltliner. Fruity, floral, fresh and slightly funky, this has all kinds of stone fruit, tart citrus and pear, bright tangy acidity and all kinds of textural richness from a bit of skin contact and the long lees aging.
