100% organic Alicante Bouschet (a rare red fleshed grape) from the legendary Bedrock Vineyard in Kenwood, farmed by Morgan-Twain Peterson. Native yeast fermentation with 50% whole clusters and aged in neutral French oak and amphora. Bottled unfined and unfiltered with very low (18ppm) sulphur at bottling only. Restrained at 12.2% alcohol. Only 74 cases made. Dark in color and intense in structure, but light in alcohol. Aromas of strawberry, black cherry, tart blackberry jam, pepper, licorice and clove. Suprisingly rich in the mouth, with zingy acidity and brisk but balanced tannin. Owners and winemakers Randal Feldman and Aaron Cherny seek to create real, minimal intervention wines made for the restaurants of Chicago.
