50% Syrah and 50% Graciano, all organically and dry-farmed from the Bas Vineyard, located just a stone’s throw from an active quarry at 1400’ in the Adelaida district of Paso Robles. The vines are trained in the labor-intensive Escahals bush vine method, used in Côte-Rôtie. Native yeast fermentation. Bottled unfined and unfiltered. 2020 was an extreme drougt year that left small crops of intensely concentrated fruit. On the nose aromas of toasted oak, vanilla, and white pepper leap out of the glass. Red fruit, blueberry, and mint balance the spice and bring freshness. Fine tannins combined with medium acidity contribute to the long finish. Founded in 2016 by vigneron Brennan Andrew Stover, Quench + Temper produces just under 1,000 cases annually of estate-grown wines. Stover runs this winery as a one man show on the side from his day job as the vineyard manager for Turley and sees Thierry Allemand as his muse.
