100% Chardonnay from a single acre of parcels in Brochon and Gilly-les-Citeaux, on clay-limestone soils. Certified organic (Ecocert, 2019) and biodynamic methods, guyot pruning. No added SO2 during vinification. Pressed with whole clusters, settled to remove the thick lees, ambient yeast fermentation and aging for 12 months in barrels (0-20% new). No fining, some filtration when necessary. SO2 added before bottling (50-55 ppm total). This Bourgogne Chard overdelivers for its lowly appellation- you could be fooled into thinking it was a baby Meursault. Medium-bodied, with a subtle nose of grapefruit, peach, pear and freshly baked bread, a satin-like texture, a tingly backbone of acidity and a salty finish. Jérôme is an under-the-radar vigneron making about 2,000 cases a year with delicate, old school methods in his own home.
