100% organic Braucol (aka Marcillac and Fer Savadou) from 30+ year old vines. Half of the grapes are destemmed and go through traditional fermentation while the other half goes through semi-carbonic fermentation with whole bunches. After malolactic fermentation the two wines are blended back together. Native yeast fermentations. Bottled without fining or filtration and with minimal sulphur.
It is a wine showing intense aromas of dark berries, black cherries, and a hint of exotic spice. Subtle earthy undertones add depth and complexity. Hints of black pepper and a touch of smoky oak carry well-structured tannins providing a solid framework, while vibrant acidity adds freshness and balance. Medium bodied.
