90% Carricante, 10% Cataratto; all organically and dry farmed from 100 year old vines bush trained onto the traditional chestnut poles. Hand harvested, soft pressed and fermented in steel with native yeasts. Aged for 10 months on the lees in steel before bottling unfined and unfiltered. The nose is delicate rather than boisterous, with classic volcanic Etna notes of crushed stone, beeswax, flowers and grapefruit pith. Lots of vibrant green apple freshness on the palate, with supporting saline mineral notes and a long, citrusy finish. Located in Etna National Park, Palmento Costanzo is a natural glory to behold. With about 10 hectares of 30-120 year-old, bush-trained vineyards, it is situated on the steep, northern slopes of the volcano in Contrada Santo Spirito, close to Passopisciaro.
