Equal parts Roussanne and Rolle (aka Vermentino) all farmed organically on 11 acres of estate vines. Hand picked, destemmed, and fermented with native yeasts. Everything is done in tank. Natural malolactic fermentation is allowed to occur, and it did in 2019. Medium to medium-full bodied, this is a rich, dense and weighty white, with Roussane’s classic wooly/waxy texture, notes of quince, melon, lime zest, almonds, mint tea and spice, wrapped up with a hint of pastry crust. Finishes with sneaky acidity hiding under all the texture and a bit of saline minerality. Pair it with creamy risotto, seafood with cream sauces, or a simple roasted chicken. The villages of Faugères their vineyards are the highest elevation in the Languedoc. This is the home of Ollier-Taillefer, a domain run by siblings Luc and Françoise Ollier.
