100% Assyrtiko, sustainably and dry farmed from vines more than 80 years old. Meaning “working the night away,” Nikteri is hand harvested at night to avoid the heat and is aged in third-use oak for six months to show concentration and oxidative characteristics, although you don’t taste any oak flavor on the palate. There is an insanely aromatic nose of honey, wildflowers, petrol, poached pear, golden apple, stone fruit and a bit of note of dried hay. Medium-full bodied and incredibly textured, with wild richness undercut by intense acidity and tons of volcanic minerality. The wine finishes suprisingly clean, with a hint of sea spray salinity and with a little hint of grippy tannins. Enjoy with umami-rich seafood or a roast pork tenderloin. Drink now or age for up to 15 years.
