100% Palomino Fino from the single ‘Cerro de Leyes’ vineyard in the Santa Lucía pago, planted in 1972. Before being pressed, the grapes are lightly sun-dried in the ‘Soleo’ process. Old Sherry barrels are then used for a traditional, natural cask fermentation. The young wine is then transferred to stainless steel and cement tanks for 18 months, under a veil of ‘flor’ before bottling unfortified with minimal fining. The result is unique and represents a journey back in time in terms of aromas and flavor that might have been more familiar in the 19th century. This is like table wine-meets-sherry and it is AWESOME! Oxidative, complex and medium bodied, with a creamy texture, sharp acidity, salt, oak, walnut, roasted corn and almonds. 15% alcohol. Needs food- this will cut through the fat of any umami-rich fatty seafood, tinned fish or Jamón ibérico.
