Fermented with natural yeasts and aged in oak and chestnut vats in the solera system, topped with new wine at the rate of 5% of the total volume annually. In 1988, what was to become this riserva was removed from the solera. This wine was then fortified with estate grape brandy only and then aged oxidatively, un-topped, in barrel. De Bartoli’s riserva was aged for 26 years, starting in 1988 and ending at bottling in 2014. Bottled unfined and unfiltered with no sulphur- zero/zero! Tobacco-blonde in color, with incredible aromatics of sweet tobacco, walnut husk, dried and fresh flowers, dried fig and citrus, and bramble and a salty, nutty umami savoriness. The mouthfeel is hard to describe yet is absolutely immense due to its flavor and elegance. For fans of Cognac! Drink now or age for 30+ years.
